Filipino Food: Sinuglaw

The Philippines is an archipelago composed of many islands so, no wonder why fish is one of the staple food of the said country. Not to mention the various local seafood dishes that vary from one locale to another. Sinuglaw is one of the well-known seafood dishes in the country that has a twist.

Sinuglaw is one of the extraordinary Filipino dishes that originated in Mindanao. It is a combination of charcoal-grilled pork belly and cut-raw fish. The name Sinuglaw was taken from the popular local cuisine in the Visayas and Mindanao region. Sugba means grill and kinilaw/kilaw means to cook by soaking in the vinegar.




HOW WAS IT PREPARED?


Preparing this food has many ways though it is mainly a combination of grilled pork and cut-raw fish (usually tuna fish) immersed in vinegar with some chili peppers, onions, and coconut milk. For some, they add green mango or cucumber and dried anchovy in it, depending on one's preference.

Depending on the restaurant but basically, prices start at Php. 90.

A bit spicy, creamy, watery, and at the same time tangy yet pleasant to taste.



WHERE IS IT FIRST INTRODUCED?


It is said that Sinuglaw's recipe was firstly introduced in Davao City. As the city is known for its scrumptious Kinilaw.



WHAT'S THE DIFFERENCE BETWEEN KINILAW AND CEVICHE?



As stated by WikiDiff, ceviche is (cooking) raw seafood marinated in an acidic medium such as citrus, vinegar, or other souring agents, found primarily in Latin America while kinilaw is a Filipino ceviche dish consisting of cubed raw fish marinated in vinegar or calamondin juice along with vegetables and spices.

Furthermore, this food is served as an appetizer or a main course and is available in any Filipino restaurant. It is even best paired with an ice-cold beer on a summer day. Definitely, one of the must-try food when you visit the Philippines.
